Bacon for breakfast; no carbs, 10g protein.
Lunch at Luby's -- grilled tilapia with lemon dill butter (they were out of roast beef! I was nonplussed), and two helpings of cabbage. About 6g carbs, 35g protein.
This was kind of an error, apparently. This is Luby's coconut cream pie, made with Splenda. I'm still trying to get specific nutritional info on it. I have a friend who's Type I diabetic, and he says he can eat this and only needs to inject 2 units of insulin to cover it; I'm not sure how that's possible, as I didn't eat the crust (he eats the bottom crust but not the back part) and this kicked my blood glucose up to 142mg/dL at one hour, which is the highest I've seen it since the day I ate birthday cake two months ago (although at least it was back down to 85 mg/dL at two hours). I won't be eating this again; that's more of a hit than I'm willing to take. I may come back and revise this when I get specific information, but I'm going to estimate this as 30g carbs -- less than the birthday cake, which was 50, because even though I went up as high, I didn't stay up nearly as long due to not having much fat with it. And let's say 6g protein.
Dinner was pizza, toppings only. About 8g carbs from the veggies, 50g protein.
Totals for the day are about 44g carbs, 101g protein. Even though I didn't blow through the overall carb limit, today gets a CARBFEST tag because I sure did blow it for that one meal; I felt it, too, in bloating and a little hop in water weight, and my fasting blood glucose was unusually high this morning also.
